What Would Keller Do?


Answer? In all likelihood, he would make a meatball. Like most culinary enthusiasts, I revere Thomas Keller as a deity. A benevolent deity, whose sublime cookbook Ad Hoc at Home is chock full of bad puns like Keller cradling a certain eating implement with the caption "I love to spoon." How can you not love a guy like that?

Even though the recipes in Ad Hoc are touted as elevated family-dinner fare, most of them are still far too complicated to crack out on a Wednesday night. You'll find a nice little recipe with only a few ingredients and then realize that half the ingredients lead to other recipes in different sections of the book that you must prepare ahead of time. The dishes in Ad Hoc are strictly those I bust out for company, specifically the sort of company I like well enough to spend a few hours brining a chicken.


These meatballs are everything that Keller promised they would be. Meaty, stuffed with parmesan cheese, comforting and delicious. Worth every step of the effort. And at the end of the day you can reward yourself for a job well done with not a back-pat but a meatball. Or two. Or three. What on earth is better than a meatball?
